Let’s make it
In a bowl mix the ginger biscuits, coconut and peanuts together. In a separate bowl, stir the MILKMAID and rum extract together.
Place the pineapple in a greased pan. Pour half of the MILKMAID mixture over the top of the pineapple.
Top with all of the biscuit crumbs, coconut and peanuts mixture. Pour the remaining MILKMAID mixture over the top of the crumbs and pineapple.
Bake for 20-30 minutes or till hot and bubbly. (Cover with foil half-way through the baking time if the top is getting too brown).
Pineapples are an excellent source of Vitamin C and other essential vitamins and minerals such as Vitamin B complex and potassium.
