You will need

  • MILKMAID 1 small tin
  • Hot water 300 ml
  • Butter 50 g
  • Cake crumbs 240 g
  • Eggs 4
  • Strawberry jam 225 g
  • Meringue
  • Fine grained sugar 130 g
  • Egg whites 2

Let’s make it

Step 1
Mix the MILKMAID, butter and water and pour over the cake crumbs in a pie dish. Add the beaten egg yolks and lemon rind.
Step 2
Bake for 1/2 hour in a moderately slow oven until set. Spread with jam whilst warm.
Step 3
Whisk the egg whites stiffly with castor sugar. Pile on top or pipe in diagonal lines and peaks.
Step 4
Place in hot oven and bake for 20 minutes or place under grill to colour.
