To make the pie crust, combine butter, crumbs and sugar. Pat firmly on the bottom of a greased 9 inch spring-form pan.
Beat the cheese until fluffy. Then beat in MILKMAID and egg yolks until smooth; add the lemon juice. Beat the egg whites with salt and fold into the MILKMAID mixture.
Pour into the crumb crust. Bake at 150°C for 50 to 55 minutes. Cool slightly, refrigerate. Top with your favourite fruit topping before serving.
Serve with your favourite fruit topping.
